My Last Meal

Experimenting with food and beverages is my favorite thing--but there is something to be said for simplicity, nostalgia, and comfort. I could be doing twelve other things (culturally thought to be more important) right now, but instead my TV is on mute, and I'm thinking about what I want to eat.

I've decided to launch my blog with the simple and timeless question that a lot of chefs tend to ask amongst themselves: If I knew I was going to die tomorrow, what would I want for my last meal?

Right now--in this moment--as I sit here listening to the wind ravage my chimes on the porch--I can think of only one plate I would want.

2 eggs poached in olive oil
2 strips of bacon with a small side of honey for dipping
a lovely pile of sliced sweet tomatoes with ripped basil, olive oil, 
a few long slices of Idiazábal cheese

...and of course... 

a snifter full of El Tesoro Anniversario on the side

And I'm off to the kitchen.
